Baked Sweet Potato Chips

Preheat oven to 300 degrees F. Slice the sweet potatoes evenly using a mandolin, using the thinnest setting/blade attachment. Carefully and lightly coat each disc with oil using a basting brush. Pouring the oil over them in a bowl will lead to an uneven coating and uneven baking. Place a baking rack on a baking sheet and lay out discs in a single layer on top of the baking rack (try to bake similar sized discs together!), and then sprinkle with preferred seasoning. You can also use a baking sheet lined with parchment paper, but you will need to flip the chips half way through. Bake for 20-25 minutes, until golden and crisp around the edges. Start watching at the 18-20 minute mark, as they will go from perfect to burnt VERY QUICKLY. Remove from the oven and allow to cool for 5-10 minutes, they will crisp up more as they cool. If some have soft centers still, pop those back in the oven for a few minutes. Repeat until all discs have been cooked. ENJOY!!
