CHOCOLATE PEPPERMINT TRUFFLES🎄 did you guys think I was going to let Christmas go by and NOT post something with peppermint?!
These were a bit of a labor of love but sooo worth it!
- in a medium pot, combine chocolate chips, creamer, and peppermint extract. Heat pot over low-medium heat and stir until chocolate in completely smooth. Pour into a bowl and put in the freezer until completely cooled and solid, or overnight.
- remove from the freezer and let it sit on the counter for 5 minutes. Line a baking sheet with parchment paper. Using a tablespoon, scoop and roll into a ball, place on prepped baking sheet. Repeat until all has been used. Place baking sheet with the rolled balls in the freezer for a half hour.
- in two sauce pans or in two mugs, melt down the white chocolate and dark chocolate separately. Dunk half of the balls in white chocolate and the other half in dark chocolate. Let harden for a few minutes.
- in two separate zip loc bags, add melted white and melted dark chocolate, push to one corner and cut off the top so it just creates a tiny hole to create thin icing lines. Drizzle the white chocolate across the dark chocolate coated balls and vice versa.
- top all with crushed candy canes. ENJOY 🤩❄️
