A classic Thanksgiving or Friendsgiving stuffing recipe, featuring a mix of bread, aromatic vegetables, and herbs, made vegan with Earth Balance butter and flax eggs.
Preheat oven to 350 degrees F. Grease a 9x13 baking dish with butter, cooking spray, or olive oil. Place cubed bread in a large mixing bowl. Prep flax eggs by mixing 2 tbsp of flax meal with 5 tbsp of water, then set aside.
Heat 8 tbsp of butter in a large skillet over medium heat. Once melted, add in garlic, onion, and celery. Add 1/4 tsp of salt and pepper. Sauté until softened (about 8 minutes). Stir in sage, rosemary, and parsley. Add in 3/4 cup of vegetable stock.
Pour the sautéed mixture over the bread and toss to coat.
In a small bowl, mix the flax eggs and the remaining 1 cup of vegetable broth. Add this mixture to the bread bowl and combine thoroughly.
Pour the stuffing mixture into the greased baking dish and bake for 45 minutes. Watch the stuffing – if it is getting too brown for your liking, cover it with foil.
Remove from oven, top with any additional herbs, salt, and pepper, then serve and enjoy.
