GENERAL TSO’S TOFU 🥡🥢 the perfect meal to whip up if: a) you’re craving take out or b) you want a meat alternative like tofu but one that actually has some flavor!
- wrap tofu in a towel or paper towel and press with something heavy like a cast iron skillet for 10 minutes.
- cook rice according to package instructions and steam broccoli to preferred tenderness.
- cut the tofu into cubes and gently toss in all marinade ingredients, EXCEPT for the cornstarch. Let it soak in the marinade for 5-10 minutes.
- using a slotted spoon, scoop tofu out of the marinade into tupperware or a plastic bag. Sprinkle in 1 tbsp of cornstarch at time, tossing to combine until a white layer is formed. repeat 4 more times to use the 5 tbsp of cornstarch.
- heat a large skillet with 1-2 tbsp of avocado oil over medium heat. While it’s heating, whisk together all the ingredients for the general tso’s sauce.
- add tofu to the skillet and cook on each side for about a minute, until just golden. Now add the sauce and stir frequently to coat the tofu. Feel free to add the broccoli and coat that as well (I did not). Do this for 2-3 minutes until everything is warmed through and sauce has thickened.
- serve over rice and broccoli. Top with sesame seeds and chopped scallions. ENJOY 🤤
