JACKFRUIT PULLED ‘PORK’ SANDWICHES with homemade coleslaw
20 mins prepServes 4
Delicious and easy-to-make vegan pulled 'pork' sandwiches using jackfruit, served with a creamy homemade coleslaw. A great plant-based alternative that tastes just like the real thing!
1. Drain the jackfruit from the can and rinse extremely well to remove brine. Chop off the hard core/end pieces and discard. Put the remaining jackfruit in a bowl, pulling each piece apart quite a bit to shred them and remove any seeds.
2. Season the shredded jackfruit with paprika, garlic powder, salt, pepper, chili powder, and cumin. Toss to combine.
3. In a skillet, heat 1 tablespoon of oil. Add the chopped onions and sauté until translucent. Add in the seasoned jackfruit, BBQ sauce, and water. Stir to combine, then cover and let simmer for 20 minutes, stirring occasionally.
4. If the jackfruit isn't fully shredded from step 1, use two forks to pull it apart further. Turn the heat up high and cook for 10 minutes to dry up the sauce a bit. Remove from heat.
5. In a separate bowl, mix together all the coleslaw ingredients: coleslaw salad mix, Vegenaise Mayo, apple cider vinegar, Dijon mustard, ground celery seed, salt, and pepper.
6. To assemble, lay down the pulled jackfruit on a whole grain bun and top with the homemade coleslaw. Enjoy!
