A last-minute, festive recipe for Oatmeal Cranberry Cookies, perfect for Thanksgiving or any occasion. These cookies feature a flax egg, vegan butter, and orange zest, topped with a simple powdered sugar icing.
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Prepare the flax egg (1 tbsp of flax meal + 2.5 tbsp of water) and set aside for 10 minutes. In a bowl, mix together flour, baking soda, cinnamon, and salt, then set aside. In a large bowl, beat together the softened vegan butter and brown sugar. Then, add the prepared flax egg and vanilla extract; mix to combine. Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Now, add in your old-fashioned rolled oats, dried cranberries, and orange zest, mixing to combine. Chill the dough in the fridge for 30 minutes. If you skip this part, take them out of the oven sooner to prevent overcooking. Use a tablespoon measuring spoon to form cookie balls. Arrange them on the baking sheet and bake for 10-12 minutes. Remove from the oven and allow to set/cool for at least 10-15 minutes. For the icing, combine 1 cup of confectioners sugar and 2 tbsp of water. Drizzle the cooled cookies with icing and enjoy!
