Need a last minute dessert? Whip up these PEANUT BUTTER COOKIES! 🎄 Dipping a portion of the cookie into chocolate took these to the next level and remind me a bit of Justin’s peanut butter cups 🤤
Preheat oven to 350° F. Line a baking sheet with parchment paper, set aside. Prepare flax egg and let sit for 5-10 minutes. In a large bowl, cream together butter and brown sugar. Add in flax egg, vanilla, and creamy peanut butter. Combine until smooth. In a medium bowl, whisk together flour, baking powder, baking soda and salt. Slowly add the dry mix to the wet mix and combine. The dough is a bit dryer than say a chocolate chop cookie dough, this is fine! Chill the dough for 15-30 minutes. Using a tablespoon, scoop and roll dough into balls. Placed on prepared baking sheet a few inches apart. Use a fork to press down on each ball twice, once vertically, once horizontally, to make what resembles a tic-tac-toe board. Bake the cookies for 8-10 minutes or until golden. Remove from oven and cook completely. Once cooled, melt the chocolate in a bowl and dip each ~1/4 of cookie into the bowl. Place back on the parchment paper and let the chocolate harden. ENJOY 🤩
