ROASTED CAULIFLOWER STEAKS with a chimichurri sauce

I actually made this entire dinner on a sheet pan, so it was easy to make and a super simple clean up! I paired these ‘steaks’ with roasted tri-color potatoes and asparagus! Below is just the ingredients and instructions for the cauliflower steaks.
Preheat oven to 400°F. Remove the outer green leaves from the head of cauliflower, but leave the stem at the bottom so it helps the steaks hold together. Cut the cauliflower in half from top to stem. Cut a 1-inch steak from each half of the cauliflower, and more if able to. As you can see, some florets will break off, feel free to roast those as well or save them for something else! Lay the ‘steaks’ on a baking sheet. Brush both sides of the ‘steaks’ with olive oil then season both sides generously with salt, pepper, and garlic powder. Roast for 25-30 minutes or until as charred as you prefer. While the cauliflower is cooking, put all the chimichurri ingredients in a blender or food processor and pulse until nicely combined. Remove the ‘steaks’ from the oven, top with chimichurri, pair with your preferred sides and ENJOY 🤤
