I think I’ve got your breakfast for this weekend covered...just sayin’ I’ve seen a ton of vegan pancake recipes that use bananas or flax eggs and I just didn’t want to do that. I really wanted to nail that traditional ‘bisquick’ pancake batter, and I think I did 🤞🏼 hope you guys love these as much as I do.

Instructions

In a mixing bowl, whisk all dry ingredients, then whisk in all wet ingredients. Whisk until smooth.

let the batter sit for at least 5 minutes (this allows the ACV and non dairy milk to react and thicken to a buttermilk-like consistency and flavor)

pour 1/4 cup of batter onto a non-stick pan or griddle* (see notes below)

once the face up side is bubbling, flip and cook until golden.

top with maple syrup, or any of your favorite toppings, and enjoy!

*i have found that if I grease the pan with butter or a cooking spray, the first pancake is a total flop, literally and figuratively, BUT all the ones after would come out perfectly. So if you have to grease your pan, just know the first one is gonna be a grease sponge*
