These brownies are so fudgy and delicious, they'll have you thinking about them for days. A perfect indulgence for the holidays or any time you crave a rich chocolate treat.
Mix flax seed meal and water and set aside for 10-15 minutes. Preheat oven to 350 degrees and grease an 8 x 8 baking dish (glass suggested) or line with parchment paper (preferred for cooling reasons), then set aside. Melt butter. In a large bowl, whisk melted butter, sugars, flax egg, and vanilla. Sift in flour and cocoa powder. Add salt and baking powder and mix until combined. Mix in chocolate chips and pour the batter into the prepared baking dish. Bake for 35-45 minutes, or longer if needed (NOT CONVECTION!). The author found 45 minutes was best in their oven. If you think they’re still too mushy, tent them with foil and cook for a bit longer. Let cool for 45-60 minutes before even slicing – this will help the brownies set and firm up. If you used parchment paper, let the brownies cool in the dish for 15 minutes, then remove and let them cool on the parchment paper itself for 30-45 minutes.
