In a very large mixing bowl combine the water, yeast, salt, and herbs. Stir thoroughly to combine.
Add flour and stir with a wooden spoon. No need to knead, just mix well - it’ll look pretty sloppy, that’s okay!
Cover bowl loosely with a dish towel and allow the dough to rise. It should double in size - this can take anywhere from 2-5 hours depending on the temperature of your room, the temperature of the water you used etc.
Lightly dust your hands. Take the risen dough and pull the sides of the dough toward the bottom, smoothing until you get a round shape with a smooth surface. Place on parchment paper and let rest for 30 minutes.
Preheat your oven to 450 degrees F. Place whatever you will be baking the dough on in the oven so it gets hot with the oven. I baked mine in a Dutch oven, but a baking sheet, cast iron skillet, or pizza stone works too! Leave the oven and your baking vessel to preheat for at least 30 minutes.
When ready to bake, dust the top of your loaf lightly with flour and slash an X about 1/4 inch deep. Line your baking vessel with parchment paper, place dough on top or in your baking vessel and bake for 30-40 minutes until you get a nice brown crust. Another measure to tell if it’s done is to tap the bottom, it should sound hollow! If you’re using a Dutch oven, take the lid off 10 minutes before taking it out of the oven.
Let cool for 10 minutes. Then slice, butter, and ENJOY 🤤
